Ingredients

  • Olive oil

  • 1 medium pork tenderloin
  • 1 bag pork rinds
  • 1/2 tsp seasoning salt
  • 1/2 tsp black pepper
  • 1 tsp ground thyme
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp paprika
  • 1 egg
  • 1 tbsp heavy cream
  • 3 zucchini, spiralized
  • 1 cup passata
  • 1½ tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • Ground Parmesan

Instructions

  1. Preheat oven to 350°F.
  2. Cut pork into segments about 1/4 inch thick and flatten.
  3. Blend pork rinds, seasoning salt, pepper, thyme, garlic powder and onion powder into a fine powder. Place in a pie pan.

  9. Plate zucchini, top with about 1/3 cup passata, sprinkle with Parmesan and add pork pieces.
